Fruit and Pork Skewers

Ingredients :

  • 800g chopped Maltese pork
  • bottle of prunes
  • dried apricots
  • 8 bay leaves
  • orange and lemon
  • 4 tablespoons orange juice
  • 2 tablespoons olive oil
  • salt and pepper

How to cook :

Remove the fat from the pork and cut into square pieces. Place the pork in a non-stick dish and add the prunes and apricots.

To make the marinade mix in a bowl the orange juice, oil, 4 bay leaves, and a little salt and pepper. Pour over the pork and fruit and stir until well coated. Let marinate in the refrigerator for at least an hour. Soak 4 wooden skewers in cold water. Remove the pork and fruit from the marinade but store the marinade for later.

Insert the pork, prunes and apricots into the skewers, and alternate using bay leaves. Grill the skewers over medium heat for 15 to 20 minutes. Turn them over often and soak them often in the marinade until the pork is done.

Garnish with a few slices of orange and lemon and serve hot.
