Italian Style Pork Soup

Ingredients :

  • 600g of chopped Maltese Pork
  • Small chopped onion
  • 2 cans of chopped tomatoes
  • large can of rinsed white kidney beans
  • 250g fresh or frozen spinach
  • 750ml chicken stock
  • 50g Parmeggiano Regiano
  • 2 teaspoons olive oil
  • 2 teaspoons of Italian Seasoning
Serves 6

How to cook :

In a deep ‘non-stick’ pan cook in a little oil the onions, pork and spices until the onions soften. Then add the other ingredients except the spinach. Wait until it starts to boil and let it simmer over a low heat for 15 minutes. Meanwhile cut the spinach into small pieces and add to the mixture and cook for two minutes. Serve with a little grated parmesan.
