
Maltese Pork Nuggets
Ingredients :
- 500g loin of Maltese Pork
- half a cup of marmalade or apricot jam
- 2 tablespoons soy sauce
- half a teaspoon of ground ginger
- a pinch of ground garlic
- cup and a half cornflakes
- cooking oil

Serves 4
How to cook :
Cut the pork into square pieces. In a plastic bag mix together the marmalade or jam, soy sauce, ginger, garlic and pork pieces. Stir the bag gently to mix the ingredients together and then let it marinate in the refrigerator for at least an hour.
Meanwhile, in another plastic bag place the cornflakes and crush them until they crumble into small pieces. Preheat the oven to 200 degrees Celsius. Remove the pork from the marinade and cover the pork with the cornflakes. Place in a foil-lined dish and grease with a little cooking spray.
Bake in the oven for ten minutes, turning the pork pieces and cook for 10 to 15 minutes until all the pink is gone. Serve with a little plum sauce and a few raw vegetables like carrot strips.
