Pork meatballs

Ingredients :

  • 900g Maltese pork mince
  • pack of thinly sliced bacon
  • 50g grated Parmeggiano Reggiano
  • fresh parsley
  • onion
  • 6 eggs
  • teaspoon of breadcrumbs
  • teaspoon of dry thyme
  • half a teaspoon of ground coriander
  • teaspoon of mixed spices
  • salt and pepper
Serves 4

How to cook :

Boil a small hot pot and webbes two eggs. Meanwhile in a large bowl mix well all ingredients except raw eggs and hard boiled eggs. Add salt and pepper to taste. In a bowl beat four eggs and mix them with the rest of the mixture.

On a table cut a large piece of aluminum foil and place half of the mixture on it. Put the hard-boiled eggs on top and then cover with the rest of the mixture. Roll the mixture well into the foil and cook for about 25 minutes in an oven heated to 180 degrees celsius. Before leaving the oven check that the internal temperature of the meatball has risen to 77 degrees celsius. Serve with mashed potatoes or baked potatoes.
