Rice and Mushroom Pork

Ingredients :

  • half a kilo of chopped maltese pork
  • 375g rice
  • 250g mushrooms
  • 200g white wine
  • tablespoon of lemon juice
  • half a teaspoon of saffron
  • 4 tablespoons of olive oil
  • 5 tablespoons of fresh cream
  • handful of fresh parsley

How to cook :

Cut the pork into long, thin pieces and fry in a little olive oil until it starts to brown. Add the mushrooms and cook for about two minutes. Then add the red wine and simmer over low heat for about 20 minutes.

Meanwhile, boil the rice in a hot pot and add the lemon juice and saffron. Before the rice is done, add the fresh cream to the pork and mushroom mixture and let it cook for a few minutes. Mix the rice with the mixture, serve hot and garnish with a little thinly sliced parsley.
