
Stew
Ingredients :
- 600g chopped Maltese Pork
- 100g bacon
- can of tomato pulp
- Spoon of tomato spread/preserve
- Onion
- Garlic
- Carrot
- Potato
- 75g peas
- 100ml white wine
- olive oil
- parsley
- salt and pepper
- 200g rice

Serves 4
How to cook :
Chop the onion, garlic, and Carrot into pieces and fry for a few minutes in the olive oil. Then cut the pork and bacon into small squares and add to the mixture. Pour in the preserves and wine and mix well.
Shortly afterwards toss the tomatoes and potatoes and simmer the mixture over low heat. While the stew is being done, boil the rice. When the meat is soft, add the peas and a little pepper and salt. Serve the pork stew on top of the rice and garnish with a little thinly sliced fresh parsley.
