Sweet and Sour Pork

Ingredients :

  • 700g of boneless Maltese Pork
  • Can of pineapple in liquid
  • 150ml water
  • 50ml vinegar
  • tablespoon olive oil
  • tablespoon soy sauce
  • 50g brown sugar
  • half teaspoon of salt
  • 2 tablespoon cornstarch
  • half an onion, finely chopped
  • green pepper
  • 2 cups of rice

How to cook :

Cut the pork into strips about 3 inches by half an inch. Cook in a little oil, in a non-stick pan until browned. Remove the pineapple from the juice and dry on kitchen paper. Pour the juice into a bowl and add to it the water, vinegar, soy sace, brown sugar and salt and pour over the pork. Cover the pan and let it simmer for about an hour.

In a bowl mix the 2 tablespoons cornstarch with 2 tablespoons water and stir. Add the mixture to that of the pork. Cook over low heat stirring constantly, until mixture starts to simmer and thicken. Add the pineapple pieces, onions and green peppers.

Cover and simmer for about 10 minutes. Cook the rice and serve the sweet and sour pork on top.
